Basal composition of swine and bovine offals according to the age and animal species

Swine and bovine offals, excepting bovine liver, contained significantly lower concentration of protein and higher concentrations of collagen, fat and water than muscles. The heart and liver revealed the best nutritive value while the lungs and brain the worst one. Young animals had lower content of lung collagen than old ones
