Basal composition and pH values of bone marrow differ significantly from those of muscular tissue. Bone marrow contains less protein and water and more collagen and fat than muscles. Its pH values are also higher. Bone marrow of young animals has less collagen and shows lower pH values than older animals. Swine bone marrow contains higher content of protein, collagen and water and lower pH values than bovine one
