An outline of the problems of the development of traditional food processing technologies in the agro-industrial sector in Trinidad and Tobago

The paper attempts a classification of the food processing sector in Trinidad and Tobago against the background of the contribution of agriculture to the national economy. Problems of small scale processors are summarized and some solutions proposed. These include a) formation of production-processing cooperatives for vegetables, meat and staples, b) the mandating of state farms to supply raw materials to small scale processors, c) support for the establishment of multi-purpose processing lines, d) on-farm pre-processing to overcome the problem of seasonality of production, and e) the introduction of state-supported collection centres. A model for the concentration of effort through a National Agroindustrial Development Authority is proposed. It is emphasized, however, that support by the state and the consuming public are probably two factors still necessary for the take-off of a truly indigenous agroindustrial sector in the Caribbean
