Studies on chemical, physical and microbial properties of beet molasses [Egypt]

The variations in the chemical composition and physical properties of the investigated samples could be due to varieties of beets, quality of roots used in production sugar, and postharvest time. Storage molasses six months had no remarkable effect on the total soluble solids and sucrose of molasses. Nitrogen substances were decreased as prolonged storage. Slight changes were occurred in the reducing substances, purity, colour and PH during storage. An appreciable increase of microorganism amount in molasses was observed in the first period of storage.
