A study on the lipids of domestic butter and margarine

This experiment was carried out to compare and examine the composition of lipids in one kind of domestic butter and two kinds of margarines. In order to get fundamental data for the manufacture of domestic butter and margarine, lipids were examined by thin-layer chromatography (TLC) and densitometry and the composition of fatty acids of neutral lipids, glycolipids and phospholipids was analyzed by gas liquid chromatography. The total lipid was 82.94 % in the domestic butter of A brand, 82.00 % in the domestic margarine of B brand and 81.12 % in the domestic margarine of C brand, of which the ratio of moisture, melting point, acid value, iodine value and saponification value were 14.98 %, 16.30 %, 17.40 %; 33.91deg C, 40.42deg C, 39.13deg C; 0.40 %, 0.12 %, 0.26 %; 31.72 %, 74.85 %, 68.72 % and 218.06 %, 162.35 %, 179.72 %, respectively. The neutral lipid was 99.53 % in the domestic butter of A brand, 99.53 % in the domestic margarine of B brand and 99.37 % in the domestic margarine of C brand, of which the ratio of glycolipid and phospholipid were 0.18 %, 0.2 %, 0.32 % and 0.29 %, 0.27 %, 0.31 %, respectively. The neutral lipid mainly consisted of triglyceride, and the content was 79.59 % in the domestic butter of A brand, 78.81 % in the domestic margarine of B brand and 75.62 % in domestic margarine C brand. 1.3-diglyceride, 1.2-diglyceride and free fatty acid were also found in common. The glycolipid of domestic butter and margarine was ceramide monohexoside, ceramide dihexoside and ceramide trihexoside, and mainly consisted of ceramide monohexoside. The phospholipid mainly consisted of phosphatidyl ethanolamine, phosphatidyl choline and sphingomyelin. And a very small amount of phosphatidyl choline was detected
