Studies on carotenoid and flesh color of root tuber in sweet potatoes

The contents of carotenoid and flesh color of sweet potato root tuber in 40 varieties were determined. The carotenoid content and color appears to be more closely associated with varieties of sweet potato. Contents and components of carotenoid depended on color of sweet potato root tuber. The correlation between carotenoid content and flesh color in sweet potato was highly significant. Therefore color difference meter and color disk were recommended for the use of estimation of carotenoid content in sweet potato root tuber
