The experiment carried out in 3 successive storage seasons concerned four apple cultivars grafted on two stem builders: Common Antonovka and Hibernal. Apples of the investigated cultivars from the two stem builders separately were kept in a cold store at 1 degree C. Apples from trees grafted on Common Antonovka were characterized by a higher content of extract and acids than these from trees on the Hibernal stem builder. The stem builders affected the content of simple sugars, total sugars, and sucrose after storage in Golden Delicious apples on Common Antonovka and in Honeygold cv. on Hibernal. The stem builders did not affect the activity of hydrogen ions H exp (+) in any of the cultivars investigated
