An investigation on high moisture containing wheat and maize grain preserved by using calcium propionate, sodium formate and sorbic acid was carried out. The reduction of the mesophyllic and proteolytic bacteria number as well as the fungi content in the preserved grain was proved. No influences of the studied preservatives on the content of total protein, digestible protein, pure protein, total lysine, available lysine, methionine, tryptophan and reducing sugars in the grain were stated
