Chemical composition of mature tubers of 43 potato varieties

In tubers of 43 potato varieties, grown at Jadwisin in 1975-84 in 5-year cycle, the contents of 11 components affecting the quality were determined. The most stable characters were the concentrations of dry matter and starch. The least stable characters belonged the content of reducing and total sugars. The mean Maercker's value (concentration of non-starch compounds) for 43 varieties was 6.2 percent. It was by 0.3 lower for varieties of starch concentration below 15 percent. For varieties of starch content above 15 percent, it was 6.5 percent
