Influence of UV-radiation on the thermal behaviour of the hog intramuscular lipids

The thermal behaviour of castrate and boar intra muscular lipids of musculus. Semimembranosus was investigated by differential scanning calorimetry (DSC) in the range 240-330 K. Before DSC analysis the samples were stored at 4'C for 16 weeks (castrate intramuscular lipids), i.e. 13 weeks (boar intramuscular lipids). Castrate and boar intramuscular lipids, as well as hydrogenated castrate intramuscular lipids, were used for investigating the influence of UV radiation on thermal effects depending on irradiation time. UV irradiation decreases the total thermal effects of both castrate and boar intramuscular lipids, which indicates the value of the occurring oxidative-destructive change. The smallest changes were observed in hydrogenated castrate intramuscular lipids as a consequence of a decrease in total unsaturation.
