Electrophoretic investigation of edible mushroom proteins

The presence of basic protein of molecule mass of about 15 Kd has been established in the protein extracts of edible mushrooms. The presence of protein, in the range of 30-150 Kd, has also been established. The classical colours for proteins do not react with mushroom proteins. A specific anti-mushroom antiserum, whose low content of antibodies indicates a very weak immunogenicity of mushroom protein, has been obtained in rabbits. The basic protein (15 Kd) is present in all of the edible mushrooms, but differences were noticed in cases of proteins of larger molecule mass.
