[Kinetics of the individual quick freezing of the sea snail (Thais chocolata D) in forced air blast freezer]

The freezing curves of the sea snail (Thais chocolata D.) were determined in a forced air blast freezer. The sea snail had irregular shape between cylinder and sphere. Variables such as size and initial temperature of the samples were studied. Also, the heat transfer coefficient and the freezing time using screened and conventional trays were determined. It was observed more time of phase change period in the sea snail with initial temperature nearer to 273,15 K; and the size and freezing time had direct relationship with each other. On the other hand from the comparison of the analytical models the Mascheroni and Calvelo (1982) method showed a better approach to the experimental time
