Dynamics of amino acids in milk of mastitis infected cows

When the amino acid spectrum of milk was studied in mastitis infected cows, a dependence between a worsened quality of milk and the changes of its amino acids content were clearly proved: the amino acid content increased with increasing positivity of the NK test (the concentration of all amino acids increased, on an average, by 3 per cent in milk with NKT 1, by 25 per cent in milk with NKT 2, by 82 per cent in milk with NKT 3). The concentration of all amino acids decreased, on an average, by 1.9 per cent in milk with 500 000 to 1 million somatic cells per one ml, while to increased by 47 per cent, on an average, in milk with 1-5 million somatic cells, by 87 per cent in the samples with 5-10 million somatic cells, and as much as by 100 per cent in milk with 10-20 million somatic cells in 1 ml of milk. The dynamics of growth was not shared equally in all amino acids, though their ranks remained unchanged. Aspartic acid, threonine, serine and alanine showed the most sensitive responses; on the other hand, glutamic acid and phenylalanine showed the lowest sensitivity in their response. As to the briefly studied influence of breed (and genetic proportions of breeds in crossbreds), on the nature of changes in milk protein, no relation coherences were recorded.
