The microbiology of Salmonellae

Salmonellae remain the most prevalent microbiological agent causing foodborne diseases, a major group of human illnesses. Also Salmonellae are amongst the microorganisms that can be transmitted from animals to humans. There is a sufficient number of reports on Salmonella recovery both of human and animal origin in Greece and other countries. First reports on Salmonellosis date back to ancient times; knowledge on the microbiology of Salmonellae has greatly increased ever since. A description of the microorganism, its biochemical properties, the antigenic composition, the taxonomy, culture and other isolation techniques, as well as the identification, the lysogeny and the pathology of Salmonellae are reviewed in the present paper.
