The object of the study was effect of blanching, freezing and freezing storage of Brussels sprouts and carrot on changes of nitrates and nitrites contents. Nitrates and nitrites were analysed by potentiometric method with the use of ion-selective electrode. Freezing and freezing storage of Brussels sprouts both blanched and unblanched influenced large changes in nitrates and nitrites contents, whereas they had no practical effect in the case of carrot. The nitrite content in carrot slightly increased at the beginning of the experiment but did not exceed described limits
