Pullulanase and isoamylase properties - enzymes hydrolyzing the alpha-1.4, alpha-1.6-D bounds of glucosides are presented. Pullulanase was applied to improve the production process of glucose, fructose or maltose syrup. Enzymatic complexes of many microorganisms were investigated in order to obtain thermostable saccharifying enzymes.
