Pentosans in milling fractions of rye grain

Total and water soluble pentosans were estimated in various streams of commercial mill flour and flours of different yield from laboratory mill. The differences in total and water soluble pentosan contents between flour from streams of commercial mill and the decrease of total pentosans content with the decrease of the yield of laboratory flours was observed. The inner layers of rye grain contained less than 3 percent of total pentosans. A high proportion (about 50 percent) of water soluble pentosans in relation to the content of total pentosans in flours of 40 percent yield was observed as well
