Changes in quality brought about by nitrogen fertilization were studied in wheat varieties Somborka and Lasta in the course of 1986, 1987 and 1988. The following nitrogen doses were used: 0, 60, 90, 120, 150 and 180 kg/ha. Wheat quality indicators were affected positively by the application of nitrogen. In the variant of 60 kg N/ha, improvements were recorded in 1000-grain mass, protein content and flour productivity I. The doses of 90 and 120 kg N/ha improved all quality indicators while the dose of 150 kg N/ha was found to be most favorable. The application of 180 kh N/ha did not bring further improvements in relation to 150 kg N/ha. Most indicators remained on the level or were lower than in the variant of 150 kg N/ha. The tested wheat varieties exhibited different reaction to nitrogen fertilization. Lasta was superior to Somborka in water absorption, power and bread yield in all fertilization variants. Somborka was better than Lasta in protein content, sedimentation value, farinographic quality number, bread volume yield, crumb value number and flour productivity I. It may be concluded that the nitrogen fertilization was more effective in Somborka, the variety superior in quality.
