Carcass quality and morphological composition of selected body parts of cows of different genotypes

Some carcass traits and morphological composition of a sample of the 10th to 11th rib chops in the Slovak Spotted cows (S), crossbred cows S x Holstein-Frisian Red Spotted breed (R) with hereditary proportion of R breed 25-37.5 % (SR 25-37.5 %) and cows with hereditary proportion of R breed 62.5 % were evaluated. Cow live weight was 603.57 kg in S, 588 kg in SR 25-37.5 %, 591.43 kg in SR 62.5 %. Dressing percentage was 53.55 % in S; 54.42 % in SR 25-37.5 %; 53.11 % in SR 62.5 %. Inner tallow yield was 3.06 % in S; 3.84 % in SR 25-37.5 %; 4.88 % in SR 62.5 %. There were little and statistically insignificant differences between total inferior parts (heads, skin, legs) and visceral yield. In the sample of 9th to 11th rib chops, musculus longissimus dorsi amounted 25.82 % in S, 24.65 % in SR 25-37.5 %, 19.94 % in SR 62.5 %.
