The paper reviews specific composition of meat consumed in CSFR, where national culinary customs mostly prefer pork. Venison, especially of deer-like species, could perhaps best meet the requirements of consumers considering the health aspect. It has evidently the lowest content of intramuscular fat and relatively high content of important mineral substances. Meat production from animals living in the open has been known for about 20 years in its non-traditional form of specialized farms. The first such farms have already begun to appear in CSFR.
