Theoretical principles and instruments of NIT (near infrared transmission) spectroscopy and the possibilities of its utilization in the milling industry

A review of the related literature, and her own investigation, convinced the author that the results of measurements carried out with near infrared radiation (NIR) spectroscope to determine the moisture, crude protein and raw fat content in different cereals can be achieved with near infrared transmission spectroscope (NIT) as well as similar standard deviations. For the measurement with NIT spectroscope, however, ground samples are not needed, in consequence the time required for analysis is shorter and it is suitable for the analysis of the raw material, on-the-line samples, as well as the final product. After several years of development work the NIT spectroscope of Hungarian manufacture will be on the market and will simplify cereal analysis, though it may be used also for the analysis of other substances.
