Neck and shoulder composition in Pulawska and Polish Landrace pigs

The dissection of neck and shoulder of 120 Pulawska and 120 Polish Landrace pigs slaughtered between 90 and 140 kg of body weight was carried out. The highest lean content and the lowest fat content in the neck and shoulder of pig fattened up to 100 kg of body weight was obtained. No differences in bones content in these cuts between Pulawska and Polish Landrace pigs were stated
