Effect of sex on fibre characteristics and meat quality traits of Musculus longissimus lumborum in young cattle slaughtered under industrial conditions

Microstructure of the longissimus lumborum muscle and meat quality traits in heifers and young bulls were investigated. No sex effect on muscle fibre diameters and muscle fibre type distribution was stated. More intramuscular fat and higher glycogen content in heifers than in bulls was observed. The significant correlation between the glycogen depleted muscle fibres content and meat DFD in bulls was estimated. Higher frequency of DFD meat in bulls than in heifers was found
