Comparison of meat performance of the Slovak Spotted and the Slovak Pinzgau bulls

In intensive fattening from 90 to 450 days of age the bulls of the Slovak Spotted breed compared to the Slovak Pinzgau breed reached the following results: higher average daily gains (1.368 kg, 1.164 kg, resp.), the same dressing percentage (56.8 percent, 56.9 percent, resp.), higher inner fat proportion (4.5 percent, 2.8 percent, resp.), the same meat in carcass (76.7, 76.8 percent, resp.) and the bone (16.8, 16.5 percent, resp.) proportions and lower separable fat proportion (6.5, 6.8 percent, resp.). M.log.dorsi of both groups contained almost identical proportion of dry matter (26.7, 25.1 percent, resp.), total proteins (22.2, 21.8 percent, resp.) and ash (1.0 percent). The Slovak Spotted bulls had a higher total fat content (3.8, 2.3 percent, resp.). In the Slovak Spotted breed total costs per 1 kg live weight were by 7.9 percent lower and returns per 1 kg live weight by 22.9 percent higher.
