Saccharides composition in amaranth grains

Saccharides composition in grain of amaranth plant (Amaranthus cruenthus) were investigated. The presence of sucrose, raffinose, glucose, fructose and maltose by using thin-layer chromatography was proved. Total amount of reducing sugars in dry matter represents 1 percent. Relative abundance of sugars, being found by automatic analyser, is as follows: maltose 12.5, fructose 37.95, rhamnose 14.29, glucose 35.71. Contents of saccharose 1.67 percent, raffinose 0.83 percent, glucose 0.64 percent, maltose 0.34 percent in dry matter were found. After autolysis at pH 5, reducing sugar content increased four times.
