Milk quality of cattle breeds in Czecho-Slovakia

Basin milk samples in the selected agricultural enterprises representing four main cattle breeds kept in CSFR (Czech-Spotted, Slovak-Spotted, Slovak Pinzgau, Lowland Black-Spotted) were analyzed in the years 1988 to 1989. Average fat content was 4.08 percent, while a significantly lower content of 3.73 percent in the Slovak Pinzgau breed was found. Total protein content was 3.30 percent. Protein content showed a lower variability (v=5.2 percent) compared to fat content (v=7.4 percent). Low correlation between fat and total protein content r=0.24 (P less than 0.01) was found. Lactose content of 4.73 percent appeared to be a constant component and it was marked by a low variability. Fat-free dry matter content (BTS) fluctuated from 8.40 to 9.10 percent. Within the set investigated, 37.7 percent of samples have not complied with the BTS limit of 8.60 percent given in the CSFR Standard for milk.
