The kinetics of growth of two brewing yeast strains in relation to ergosterol synthesis and glycogen dissimilation after pitching was comparatively investigated. It was established the direct relation between wort oxygen content and new yeast biomass formed from ergosterol synthesis and glycogen dissimilation. Different kinetic models are synthesized to explain the influence of the yeast growth based on the experimental data obtained.
