Baking quality of grain of some foreign spring wheat varieties from the collection of genetic resources

In 1990 and 1991 grain of 27 foreign and 2 Czechoslovak spring wheat varieties was evaluated with respect to yield, crude protein content, meal microsedimentation value (micro SDS-test), gluten content and baking quality. The highest variability was observed in wet gluten swelling and extensibility while the lowest one was found in the content of crude proteins.
