Characteristics of nutritive value of protein from meat of sheep at different age

The meat came from quadriceps femoris of Polish long wool sheep, the Kamienicka variety, slaughtered at the age of 5, 6, 7, and 8 years. Percentage of collagen in the meat was related to age of the animals. Nutritive value of protein assessed on the basis of biological indices NPU (net protein utilization) and BV (biological value) was high and not related to collagen content in the meat. The NPU index was from 77.4 up to 79.5, whereas the BV was from 80.2 up to 82.9. Regardless of age, protein from the meat was similarly digestible. The AD (apparent digestibility) coefficient was from 84.3 up to 86.4 percent whereas the TD (true digestibility) one about 96 percent
