This review article discusses the steps involved in both domestic and commercial dehulling, describes the methods of commercial lentil dehulling in different countries (India, Bangladesh, Nepal and Pakistan, Syria, and Turkey) and summarizes the steps involved in processing lentil for consumption as food for primary or secondary consumers. The factors affecting lentil processing are outlined. Of these, laboratory research indicated the tempering and drying steps to be the most crucial, in terms of yield of split lentils
