An investigation was conducted to examine changes in protein content, sedimentation value, and wet gluten content occuring in consequence to nitrogen dose, time and method of application, NPK fertilization, and sowing date and density. The tested quality parameters increased with the increase in nitrogen dose. Regarding the effect of NPK fertilizers and their ratios, the variants with maximum nitrogen doses had the most favourable effect on wheat quality. The discrete application of phosphorus and potassium was ineffectual. The best nitrogen application method consisted of nitrogen application in fall and several top-dressings during growing season
