The preparation of high phosphatidylcholin content lecithin by fractionation with ethanol was described. The extraction was tested comparatively by circulating and turbulent mixing. The circulating mixing insures higher efficiency of labour and lower consumption of energy. The conditions of fractionation (temperature and time for extraction, temperature for stratification), and the proportion lecithin:ethanol were investigated.
