The extent to which the natural antimicrobial agents of milk contribute to the safety and keeping quality of raw milk, liquid milk, cheese and related products, baby foods and animal feeds is discussed. Two aspects are treated: (a) effects of the natural antimicrobial agents occurring in raw milk and the milk products mentioned above; (b) effects of (isolated) natural antimicrobial agents (after addition/activation) in raw milk and the above-mentioned milk products. Other applications of the natural antimictobial agents are referred to briefly. The paper does not deal with the direct effect of the mentioned agents on the health of man and animals; legislation is also beyond the scope of this paper.
