There are several kinds of mustmeters. If the must is colder or warmer than 17.5 degrees C deduct or add 0.1 must grade for each 2 centigrade. The Hungarian must grade shows how many kg of sugar there is in 100 kg of must. The density of must can be measured by refractometry too. The reading has to be corrected according to the temperature. The newest regulations allow must chaptalization with the following restrictions: Sugar can be used when the must degree is not more than 19. Sugar content must not be raised by more than 3 degrees and above 19.5 degrees. The sugar must be dessolved in the must (not in water). Chaptalization must be reported to the authorities
