Addition of plant raw materials such as seed of wild rose (Rosa rugosa) or quince (Chaenomeles speciosa) to stuffing (Baltic herring flesh) slowed the lipid oxidation down during the freezing storage. The seeds also showed to have negligible but statistically significant protective action for proteins
