Technological value was estimated after grain malting, on the basis of the protein content, extractability, fine-coarse grind extract difference, wort viscosity, soluble nitrogen compounds content, Kolbach index and diastic power. In comparison with foreign cultivars, mainly from Germany, home-bred cultivars seem to have, on the whole, better technological value because of the lower protein content in grain, higher extractability, lower wort viscosity and higher amylolytic activity of enzymes of malt
