Interrelations between biochemical parameters in fruits of cherry plum cultivars used for dessert and canning

Study was performed of 12 selection parameters (fruit weight, contents of dry substances, sugars, titratable acids, ascorbic acid, leucoanthocyans, anthocyans, pectic substances, etc) of fruits of cherry plum (Prunus cerasifera Ehrh.) cultivars used for dessert and canning, which showed a reliable difference only in the anthocyan content (P=0.999). In fruits of table cherry plums, the dry matter content correlated only with the sugar content (r=0.77; P=0.99). At the same time in canning cultivars, the dry matter content correlated with the contents of ascorbic acid (r=0.50; P=0.95), leucoanthocyans (r=0.51; P=0.95), and the sum of pectic substances (r=0.74; P=0.99), which provides wide breeding potentials for selecting cultivars with various chemical compositions of fruits
