The interaction between protein fractionation and the quality of winter wheat crop

The analysis of 27 varieties of the world assortment of winter wheat cultivated under identical conditions revealed following information: The biggest varietal differences were in baking (coefficient of variability v=23 %). The average grain crop was 8.42 t.ha** (-1) (variety variability 8 %). The average values of the fraction analysis of grain proteins revealed that the fraction of cytoplasmatic proteins (albumins and globulins) represented 21-29 %, prolamines 31-37 %. 24-30 % was the gluteline fraction. The biggest part of promines and glutelines contained the variety Kosava, the least part contained Turda. It corresponds with the values of the sedimentation test. The calculated correlations between important agronomical values and the content of organic substances confirmed generally valid relations. Following statisticaly important correlations were found: negative correlation between the content of starch and the content of proteins, positive correlation between baking quality and the content of gluten proteins, positive correlation between amylolytic activity or trypsin-inhibitor activity and the content of cytoplazmatic proteins, negative correlation between trypsin-inhibitor activity and exoproteinase activity.
