Influence of transport stress on the glycogen content in the muscle and technological quality of steer meat

The influence of extremely long transport (300 km) of steers on glycogen reserves in the musculus semitendinosus bioptade prior slaughtering and on meat quality was studied. The animals came from the pasture breeding. From the point of view of the risk of DFD meat formation, the glycogen content did not fall below the critical value. It reached 78.93 micromol.g** (-1) in the average. The average pH value 48 hours post mortem was 5.53. Meat quality expressed by colour (7.61 % remission), loosely bound water (29.27 %), cooking losses (41.35 %) and shearing force of muscle WB (7.89 kg.cm** (-2)) was characterized as normal.
