Study on chemical changes and nutrient utilization in germinated soybean

Chemical change and nutrient utilization of soybean seed during 0-7 days of germination were studied. During the germinating process, there were apparently no changes in crude protein and soluble protein content of the seeds. But protein digestibility and protease activity were increased during the course of germination. Glucose content and amylase activity were increased while starch and dry matter content of the seeds were reduced during the germinating period. Germination had no effect on the content of trypsin inhibitor in soybean seed. Nutritive value of 2 day germinated soybean for early weaned pigs were improved by autoclaving.
