Evaluation of tuber quality in selected sweet potato (Ipomoea batatas (L.) LAM) varieties

Evaluated sweet potato varieties for tuber quality, size, shape, external texture and low sugar content after baking. Beta amylase activity of these varieties was also determined with a view to establishing a possible relationship between beta amylase levels and sugars formed on cooking. In the screening for the non-sweet trait, no obvious relationship was established between sugar content after baking and beta amylase activity. Varieties were grouped according to sugar content as a percentage of dry weight and low and high beta amylase activity. Two varieties from the University of the West Indies population were identified as low sugar content but only one was of promising commercial potential. Of the 7 new and introduced varieties evaluated for yield and tuber shape, 5 produced marketable yield greater than the standard variety at 24 weeks after planting. The best overall performers had marketable yields of 188.3 gm/plant and 313.2 gm/plant. One variety's ovoid shape tubers enhanced its processing potential.
