Composition and biological value of some corn products

Corn flour, instant palenta, corn flakes, corn flips, jumbo flips and initial materials have been analyzed. The products with the largest energy value were corn flips (1937 KJ/100 g) and jumbo flips (1745 KJ/100 g). The proportion of energy derived from carbohydrates is the largest in corn flakes and corn flips (90.2 and 34.8 respectively). Energy derived from proteins participated with less than 10 in total caloric content of analyzed products, while the participation of fats in total energy value was 2.3 in corn flakes and 35.5 in corn flips. The fats of jumbo flips have the greatest biological value because they have 44 of linoleic acid. Thermal treatment that occurs in technology of these products hasn't influenced the content of unsaturated fatty acids. In all these analyzed products there were no Cd, Pb, As and Hg residues.
