The depolymerization of the carbohydrates from artichoke tubers by aqeous solutions of oxalic acid

The depolymerization of the total carbohydrates in the water extracts obtained from artichoke tubers, sort Bianca was studied. The content of total reducing matter was determined by a spectrophotometric method using the coloured reaction with picric acid and a qualitative TL-chromatographic method. The dependence of the conversion degree on the reaction time was established at the following reaction conditions: temperature of 60, 70, 80, 90 and 100 deg C and pH of 1.9, 2.0, 2.08 and 2.38. The highest conversion degree of about 92 was achieved in the ranges of temperature and pH between 95 to 100 deg C and 1.9 to 2.1, which corresponded to the concentration of oxalic acid in the reaction mixture of 0.0396 to 0.277 (mol/dm** (-3)), respectively
