Physiological changes of postharvest asparagus spear

The optimum storage temperature of asparagus spear is 0-2 deg C and the storage duration is 7 days. Length, firmness, and fiber content of the spear increase with increasing storage temperature and duration, but Vitamin C, total soluble solids, titratable acid, chlorophyll content, and cellulase activity decrease, resulting in deteriorating edible quality. The harvested asparagus spear in storage should be kept in vertical posture. In contrast with horizontal posture, vertical posture reduce curvatures and loss of rutin content, but increase chlorophyll content and reduce activity
