Carotenoid and cholesterol contents of quail eggs under feeding of alfalfa [Medicago sativa] leaf protein concentrate

A 51-day feeding trial on 120 laying quails was conducted to compare the biological activity of carotenoids of a commercial feed (control diet) and alfalfa LPC. commercially produced alfalfa LPC (Quntessence) and alfalfa (cv. DuPuits) LPC produced at Nagoya University were used to replace 10-20% of the commercial feed formulation. Though not statistically significant, egg production rate was higher in the control diet but LPC diets tended to produce heavier egg weight. The level of carotenoids in the LPC diets was not reflected in the increase in the carotenoid contents of egg yolk, liver and plasma nor in the egg yolk color rating as scored by the Hoffman-La Roche Yellow Color Fan. The drastic decrease in the degree of deposition of carotenoids in the ovary yolk and liver in the 20% commercial LPC diet suggests that there are some factors present in the LPC affecting the deposition of pigments. The lowering of plasma cholesterol with LPC replacement possibly contributed to the low biological activity of the LPC carotenoids
