Effect of nitrogen fertilizers on the quality of stored and frozen celeriac

After storage of celeriac ascorbic acid decreased about 20 percent, and after freezing a 40 percent decline was observed. Content of nitrates depends on cultivar, nitrogen fertilization rate and studied cultivar. During storage of celeriac the amount of nitrate decreased about 15 percent, and in frozen decline reached over 40 percent. High suitability for storage was observed in cv. Odrzanski. Chill and cold growing season resulted in big losses during celeriac long-term storage
