The material made borage and evening primrose seeds, chufa bulbs, waste grainy and berry fruit seeds left after fruit-juice production. It was shown that fats of these seeds exhibited superior fatty acids composition. Bioactive gamma-linolenic acid was found in the fats of borage seeds, chufa bulbs and currants. Among the oils studied, the highest stability was exhibited by chufa bulb oil and the borage seed oil
