Non conventional parameters of the sugar beet like the content of rafrinose, reducing sugars, betain, glutamine and inorganic phosphate play under some agronomic conditions an important role on the technological quality of sugar beet. Raffinose, invert sugar and soluble nitrogen are all responsible for loss of sugar in molasses. Reducing sugars and glutamine decrease alkalinity in contrast to inorganic phosphate, which has an increasing effect. Raffinose and reducing sugars are mainly influenced by temperature, climate, year/site and to some extent by variety, topping and fertilization. Betain and glutamine are influenced by year/site, fertilization, variety and topping. Phosphate is mainly influenced by year/site, but to a lesser extent by nitrogen-fertilization and harvesting date. By selection of variety, by correct fertilization and harvesting the grower has the possibility of improving the beet quality further.
