Gliadin content of canned meat, canned food, dehydrated soup and deep-frozen ready-made meals bought in trade was measured. An ELISA kit based on calibrated monoclone gliadin antibody was used for examinations. In order to recover gliadin from the sterilized model samples were prepared (gliadin added to pea pulp). Gliadin content of the dehydrated (powdered) soups was always reliably measurable. This method could be adopted for demonstrating wheat flour indicated on the label. Gliadin content of canned meat, canned food and deep-frozen products was measurable. When there were hydrolysed decomposition product of plant origin or stabilizers in the conserves, kit gave a positive result in the most cases. From among additives available in trade xanthane, lacust-tree seed flour, guar-gum and tragacanth polysaccharides were soluted in different solvents. Molecules that were soluble in the different solvents gave positive results in the immune chemical reactions in every case
