Chemical composition of breast and thigh muscular substance in turkey-cocks and turkey-hens of Ivagal breed at the age of 16 and 17 weeks

The experiment was performed in the Station for Turkey Breeding in Ivanka pri Dunaji. Fattened turkeys of commercial type Ivagal were used at the age of 16 and 17 weeks. Chemical analyses of breast and thigh muscular substance was done in turkey hens and cocks fed with standard feed mixtures and kept in deep litter. The content of dry matter in breast and thigh muscular substance (1.21 and 1.15 % vs. 1.08 and 1.04 %) rose moderately in turkey-hens with ageing. The content of proteins in breast muscular substance was higher in turkey-hens and turkey-cocks at the age of 17 weeks (24.90 and/or 24.48 %) vs. 23.06 and/or 23.60 % at the age of 16 weeks. There were significant differences neither between breast and thigh muscular substance in the content of plasmatic proteins (20-24.23 %) at the age of 16 weeks nor between sexes. The content of plasmatic proteins was markedly higher in the breast muscular substance at the age of 17 weeks, and there was a significant difference also between the sexes. The thigh muscular substance of both sexes contained more connective tissue proteins than the breast muscular substance (0.88 and 1.30 % vs. 0.60 and 0.79 %). The content of full-value proteins represented 96.93, 96.63 % and/or 97.59, 97.16 % in breast muscular substance of turkey-hens and turkey-cocks at the age of 16 and 17 weeks. The proportion of tryptophan to hydroxyproline was unambigously higher with the breast muscluar substance in both sexes irrespective of age. The content of fats in breast muscular substance represented 1.04 % in turkey-hens and 0.94 % in turkey-cocks and 0.79 and 1.34 % in thigh muscular substance at the age of 16 weeks. The content of fats in breast as well as thigh muscular substances was highly significantly higher in turkey-hens compared with turkey-cocks at the age of 17 weeks.
